This Festive Cocktail – The Method
WHere is an easy interpretation of a beverage from the seasonal drinks list. This is a large-volume pre-mixed that's loaded with flavours associated with festive period, rendering it perfect for a celebration. Any leftover citrus syrup to use in morning drinks, desserts, or for additional servings of this cocktail.

Serves 10 people
To make the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
For the Drink (produces 850ml, enough for 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Instructions
To prepare the Cordial: Place all the ingredients inside a pan, bring to a light boil, stirring to dissolve. Next, take off the heat and let it to cool down fully. Pour into an sealable bottle, seal and store in the fridge, where it will keep for up to four weeks.
To make Batch Mix: Combine all the liquids in a large bottle, allow it to infuse for one hour, then strain , ideally through muslin, to ensure it's perfectly clear.
For serving: Pour 85ml of the batch mix into a stirring glass filled with ice, and stir gently for about 60 seconds to chill. Pour into an cold coupe glass or a similar vessel, garnish with a few cranberries and finish using a brief mist with the mandarin essence over the top.
